Sono ormai passati più di venti anni da quando ho lasciato Roma. Ricordo una delle ultime cene con i miei amici è stata in un’osteria in un vicolo del centro. Era letteralmente un garage, molto informale e molto accogliente, apparteneva alla famiglia di un amico. Il centro non era poi così ben tenuto come oggi e decisamente non c’erano tanti turisti tutto l’anno. Le autentiche osterie erano già in via di istinzione. Mi reputo fortunata di aver avuto la possibilità di aver conosciuto quei ristoranti improvvisati. Quando infatti sono tornata, al posto dell’osteria hanno messo uno di questi bar super moderni che offre aperitivi a qualsiasi orario del giorno. Ho cercato le osterie in giro per la città, ma ahimè oggi sono eleganti luoghi per chi cerca una cucina forse anche troppo elaborata. L’osteria di cui vi parlo io era autentica, con la nonna in cucina assistita dalla mamma, non si poteva scegliere cosa mangiare, ma c’era solo quello che ti offrivano. Un ritrovo per un passante più che un ristorante. Oggi allora vado alla ricerca delle trattorie che forse più si avvicina, come idea di cucina, al cibo tradizionale. Sia l’osteria che la trattoria erano luoghi dove con pochi soldi si mangiava bene in un ambiente caldo e per niente formale.

Sapete la differenza tra le osterie e le trattorie? Io ci sono arrivata un pochino per intuito.

Le osterie hanno origini antiche e tradizionalmente erano luoghi dove si serviva principalmente vino, accompagnato da piccoli spuntini o stuzzichini. Nel corso del tempo, molte osterie hanno ampliato la loro offerta aggiungendo anche pasti completi. Avevano però sempre un menu limitato con un’attenzione particolare ai prodotti locali e alle ricette tradizionali.

Anche le trattorie sono  ristoranti informali, ma sono spesso considerate un passo sopra alle osterie in quanto offrono un menu più vario e completo. Tradizionalmente, le trattorie erano conosciute per servire piatti casalinghi, preparati con ingredienti freschi e di qualità. Le trattorie possono avere un’atmosfera accogliente e familiare, offrendo una gamma più ampia di opzioni culinarie rispetto alle osterie.

Mi rendo conto che il cambiamento è inevitabile, anche nella cucina italiana, ma la mia ricerca continua con determinazione. Sono certa che, nonostante le trasformazioni, ci sono ancora molti nostalgici come me che cercano quel calore e sapore autentico. La tradizione vive nei cuori di coloro che persistono nella ricerca di quei luoghi speciali che rendono casa anche in un sapore.

It’s been more than twenty years since I left Rome. I remember one of the last dinners with my friends was in a tavern in a narrow alley in the center. It was literally a garage, very informal and welcoming, owned by a friend’s family. The center was not as well-kept as it is today, and there certainly weren’t as many tourists year-round. Authentic taverns were already on the verge of extinction. I consider myself lucky to have had the chance to experience those improvised restaurants. When I returned, instead of the tavern, they had replaced it with one of those super modern bars that offer aperitifs at any time of the day. I searched for taverns around the city, but alas, today, they are elegant places for those seeking perhaps overly elaborate cuisine. The tavern I’m talking about was authentic, with the grandmother in the kitchen assisted by the mother; you couldn’t choose what to eat, but there was only what they offered you. A meeting place for passersby rather than a restaurant. So today, I seek out trattorias that perhaps come closest, in terms of the idea of cuisine, to traditional food. Both the tavern and the trattoria were places where you could eat well for little money in a warm and informal atmosphere.

Do you know the difference between taverns and trattorias? I figured it out a bit intuitively. Taverns have ancient origins and traditionally were places where mainly wine was served, accompanied by small snacks or appetizers. Over time, many taverns have expanded their offerings by adding complete meals. However, they always had a limited menu with a particular focus on local products and traditional recipes. Trattorias are also informal restaurants but are often considered a step above taverns as they offer a more varied and complete menu. Traditionally, trattorias were known for serving home-cooked dishes prepared with fresh and quality ingredients. Trattorias can have a warm and family-friendly atmosphere, offering a broader range of culinary options compared to taverns.

I realize that change is inevitable, even in Italian cuisine, but my search continues with determination. I am confident that, despite the transformations, there are still many nostalgic like me seeking that warmth and authentic flavor. Tradition lives in the hearts of those who persist in the search for those special places that make a taste feel like home.
